You may have heard me say that I don’t care for Vanilla Shakeology. That is still 100% true when it is straight from the package… But that little gem has helped me make some of the YUMMIEST concoctions. **This recipe is NOT fix-approved.** It may just make your day if you need a little treat though… 😉
I’ve played with it a little… So my notes are these… If you need another variation, I also have made it with 6 oz cold filtered water and 4 oz unsweetened vanilla almond milk. I’ve also made it without the fat free/sugar free pudding mix powder (not nearly creamy enough for me).
I did use FF/SF mix… I don’t encourage regular use of it because it does contain aspartame, which has been linked to all sorts of negative side effects. Use with caution and sparingly…

These cookies were inspired by a Shakeology recipe. I tried those ones and found them a little too crumbly for my taste… Plus, they just needed a little extra something.
A little side benefit… These cookies are a super easy way for us to sneak veggies and superfoods into our little one in a way that he devours and enjoys!

So I promised this one on Monday night after I posted my teaser pic. I find new recipes every day on the web because I follow a couple of different food bloggers faithfully. The thing is… The recipes are always delicious and easy to duplicate, but they aren’t always healthy. After I began my own journey last year, I was determined to take some of those recipes that were shared and make them better able to fit into our healthy lifestyle. So on Monday morning, I came across a cheesy lasagna soup that would not have been 21 Day Fix approved. I REALLY wanted to eat it though, and the pictures of it kept calling my name… So, I set about making it work for me. It was a VERY happy bonus that the hubs declared it the best soup I’d ever made and that it was even better as leftovers. I also never really expected the little man to like it, but he does like lasagna… He ate it like he had a bottomless pit in his stomach and kept wanting more and more! Here you have it. Lasagna soup with cheese that is momma, daddy, and toddler approved! If you are following the 21 Day Fix nutrition program with me, this can fit perfectly into your plan. For daddy and baby, they had the shredded mozzarella option (and Liam won’t normally eat cheese of any kind!?!). I had a 1/2 container of ricotta stirred into mine until is was fully blended. I promised you this one the other day… We have been crushing on this amazing soup for over a month now. We really LOVE Panera Bread’s low fat chicken noodle soup, and this is right up there with it! It is still VERY hard for us to get Liam to eat a variety of foods, but he loves Panera’s soup and he loves this, as well. So… Here you have it.
