Crockpot Chicken Lasagna Recipe

Well, I didn’t mean to tease everyone when I posted a pic on Facebook last week after I made my first crockpot chicken lasagna… The thing is that I didn’t write anything down when I did it! I decided to remake it today and took some notes…  Below you’ll find some pictures that show me building my layers and the full ingredient list and directions. I’m really excited about this recipe because it’s a way for me to easily get in protein and baby #2 isn’t a big fan of a lot of meat! 😉 Plus, it took me about 15 minutes from start to finish and that was with taking pics! Add in that the recipe is (picky) toddler and hubby approved, and you’ve got a winning meal!

First, you’re going to start by laying down a layer of sauce in the bottom of your slow cooker.  As you can see in the picture, I often use Reynolds Slow Cooker Liners to make clean up easier.  I LOVE not having to scrape or soak cooked sauce off the sides!

Next, you’re going to build your first layer by placing your no cook Barilla lasagna sheets down and top with shredded chicken, ricotta and mozzarella, if you wish.

I usually do three “filled layers” total.  (You can see that I go heavy on the ricotta in the beginning…  I need to learn to judge how much I’m using better!) The top layer of today’s lasagna is finished and looks like this…

To finish it off, you simply add sauce, cover with noodles, add another layer of sauce and top with shredded mozzarella.

Turkey Vegetable Barley Soup

If you’ve ever bought a box of Quaker Quick Pearled Barley, you may have seen the recipe for Quick ‘N Hearty Vegetable Barley Soup on the back of the box. My MIL was the first to introduce me to it, and since then we’ve made it more times than I can count. I’m sharing my modified recipe below for a higher protein, veggie packed, garlic powered version. What can I say… We love garlic! If you decide to mix it up, chicken makes a GREAT substitute as noted.

Pay the Farmer to Keep You Healthy

I WAS one of those people who ate with very little thought to whether I was feeding my body nutritious food. I was reactive when it came to health issues. I was suffering from migraines and joint pain and arthritis from past injury.

All that changed when I recommitted to meeting my running goals, added in cross-training with Beachbody programs, and began drinking Shakeology.

Yes, I’m a busy mom, but I’m not going to use that as an excuse not to take care of myself. If anything, that’s even more reason to be proactive in keeping our family healthy. I couldn’t possibly ingest all the superfoods I get in Shakeology… So, it supplements the clean healthy fruits and vegetables my body needs and gives my body a protein boost and energy and cuts cravings at the same time. There’s this really great book called The Compound Effect by Darren Hardy. If you haven’t read it, YOU need it in your life.
 
The book perfectly illustrates and reveals how small consistent changes over time often have a big impact in our lives. This is true if your choices are positive, but it’s equally true if your choices are negative.
 
So whether you want to save money, lose weight, run further, lift more… You have to start at the beginning (where else would you start) and be consistent.
 
You can think of it like a child… Your infant didn’t go from laying in a crib to running… Why not give yourself the same grace?
 
The things you do every single day matter. If you have goals you want to reach, your decisions need to line up with them. Just stay on the path, and let your determination carry you marginally closer every day. <3

Being a Beachbody Coach…

I’ve been a stay at home mom to this miraculous little boy for 21 months tomorrow. Sometimes it seems like barely a day has gone by. I wouldn’t trade our time together for anything, but I remember that first year being so absorbed in him and our family that I lost who I was as a person and really didn’t take the best care of myself.

8 months ago, I committed to running the Pittsburgh Half Marathon, and 7 months ago, I became a Beachbody coach. If I had known then what I knew now, I would have sought out the opportunity sooner. I suddenly found myself surrounded with a family of people who supported and uplifted and cheered each other on. I was running toward health and fitness and business goals.

Today was a huge milestone when our family earned our biggest Beachbody paycheck to date. I’m still amazed every day that I get paid to share my experiences and help other people on their fitness journey.

Waiting out the storms…

She Adjusted Her Sails

I know everyone has one of “those” days… I woke up and by some twist of fate managed to gain 7 pounds overnight! 🙁 󾌴#thatdoesntREALLYhappen I had a 6 mile run scheduled today, but I wanted to get in 9 miles… 󾌳 Then Liam woke up early and that plan got tossed out. ✔️ 6 miles it is! We had a great trip to the doctor, and I took little man to get a haircut… Everything’s going great, and then while I’m paying the bill… He climbs up in the window to look outside and tumbles on to the floor. I’m just going to go out on a limb and say how UNHELPFUL it is to make the parent feel bad in this situation. #thanksrandomspectator

Things can go from great to terrible in two seconds. I’m convinced parenthood was an idea conceived as a mental test of fortitude. All ideas of shopping for a card for hubby’s birthday tomorrow and getting groceries for making that pumpkin french toast went straight out the window.

As much as it killed me to listen to his screams in the moment, I know that I can’t control everything that happens to him for the rest of his life. For a control freak like me, it sometimes seem impossible to cope with that lesson. Liam has taught me a lot, but the things that stick out today… 1) Enjoy the moment… The hugs, snuggles and love because they pass quickly and toddler emotions are mercurial, to say the least. 2) You can’t control winds of life, but you can control your reaction to them… I will always try to be the port to his storm.

I am humbled and reminded that THAT is my role. I’m not here to control. My job is to comfort, support and be a safe haven for him to return to. Sometimes, that means a mental adjustment for this momma so that hurricane Liam’s emotions don’t take us both out. 😉 Whatever your “hurricane” may be, know that you’re not in the storm alone… Others are out there battling by your side. For what it’s worth, he blew his very first kiss to me today. Somehow that little action soothed my soul and made my heart full again. ❤️

I love variety in life, and sometimes I also need to get some superfoods into a picky toddler… So, what is a momma to do? Enter in these peanut butter chocolate chip cookies!

They’re easy to make, taste delicious, and offer one more use for Vanilla Shakeology. If you decide to incorporate this recipe into your “fix” lifestyle or another Beachbody fitness/nutrition program using the container system, this counts as a yellow (treat swap).

For the cookies above, I mixed in dried cherries, but I personally prefer these without dried fruit.

Turkey Sloppy Joes – Recipe Review from FIXATE

Today Liam and I decided we wanted to mix it up for lunch. I had ordered several copies of Autumn Calabrese’s new cookbook, FIXATE. I also brought one back from Coach Summit 2015 in Nashville over the weekend. This cookbook offers tons of great recipes across all categories. Since the container system is being incorporated into new fitness programs (more than just Autumn’s offerings), having this book is a game changer.

Our shopping was done, and we had the necessary ingredients to make several different new dishes. Of course, I started with the one that I wanted the most. LOL… So Turkey Sloppy Joes it was!

Have you ever worked in a restaurant that serves sloppy joes? I have… Want to know the secret recipe? Cooked hamburger, ketchup, mustard, and sugar. Now, I’m not going to give away the ratios of those things, but I’ll say they err more on the side of being unhealthy. The sloppy joes in this cookbook had me throwing in things I would never have thought of… Hot sauce, raw honey… Those were just two of the ingredients I was surprised to be using.

It didn’t take long to have dinner finished and plated. Altogether, it was about 35 minutes until it was ready. I did a few things slightly differently than directed. One was cooking the turkey meat off in water to keep it moist and help it crumble better. Another was eliminating the tomato paste… Okay, so I thought I had all the ingredients!  😉

Here it is plated… So what did I think? It was wonderful!!! Way more flavorful than sloppy joe normally is. It wasn’t even comparable to Manwich! I actually wanted more, but I had a 1.25 cup serving (the recipe makes 4 servings), which was enough to stuff a pocket thin and still have this bowl leftover. There’s no reason to be greedy just because it’s so good, right?

I wasn’t the only one who thought so… Here’s the first impression…
